The Charlie Palmer Collective began in 1988 when Chef Charlie Palmer opened the beloved, original location of Aureole in a brownstone on Manhattan's East 61st Street. Since those days, he's spent his storied career building a company of restaurants and hotels filled with consummate professionals who are all passionate about three things: food, wine, and most importantly, hospitality. For over 30 years Charlie has trained and helped to catalyze the careers of countless hospitality professionals including many celebrated chefs such as Michael Mina, Bryan and Michael Voltaggio, David Burke, Ilan Hall, Gerry Hayden, and many more. Chef Palmer believes in the principle of promoting from within; many of our Executive Chefs and General Managers began as line cooks or culinary externs.
