Hard work, learning the basics and wanting to be the best at what they do has taken Stefano De Blasi and Edoardo Perlo from regional Italy to the forefront of modern Italian food in Australia. Arriving in 2008 and starting on the bottom rung of the hospitality ladder in Sydney’s CBD, the pair moved on to running restaurants before opening the first Salt Meats Cheese warehouse in Alexandria in mid 2012. While it once offered wholesale gourmet Italian food, with a small retail offering on the side, the Salt Meats Cheese Group is now a multi-venue operation with venues in Sydney, Brisbane and Surfers Paradise, offering fine Italian produce at its delis, a place to have a freshly-roasted coffee during the day or the place to meet for casual Italian dining at any one of their ristorante and pizzeria. They duo prefer to work with people like themselves, humble but with a work ethic that has driven the business from a drafty industrial warehouse to a rapidly expanding family of venues. They pride themselves on being innovators and trendsetters in the dynamic Australian food scene and also surround themselves with the best people they can get, encouraging pro-active feedback to help build the business. The Salt Meats Cheese philosophy is all about delegating to the people who “get it”, letting them take ownership of their role and supporting them through in-house training programs.
