I set up The Wilderness to cook modern British food to excite, provoke and taste delicious.
My vision of British food is bold and nicks spice and influence from around the world as felt fitting being from the cultural melting pot that is our beloved (mostly) Birmingham. In the kitchen, we source world class products and look to deliver clear, intense flavours in playful ways.
I want the dining experience to be as relaxed as possible and I want everyone to feel welcome. I'm not interested in making fine dining stuffy or inaccessible: I don't care what you wear, I just want you to have the best possible time whilst you're with us.
Finally, as a disclaimer, I do play rock and roll not smooth jazz because we're in the restaurant 16 hours a day and anymore elevator music and someone will snap. We play mostly classic rock that we enjoy listening to.
