Fresh vegetables, fruit and herbs grow abundantly in summer and autumn and are gathered daily for the kitchen. Kilmore Quay fish, Wexford beef and lamb, local artisan cheeses, all feature on the menu in the highly acclaimed restaurant which serves classical cuisine with a modern light touch, garden to table is the ethos here.
