Overview:2016 marked the 35th year in the life of Michigan-based Al Dente Pasta Company, a pioneer in America’s specialty food industry. Located near Ann Arbor, Michigan in the quaint town of Whitmore Lake, it is a true family business run by the husband and wife team of Monique and Dennis Deschaine along with 18 long time employees.
Monique learned her pasta making technique back in 1981 from none other than Marcella Hazan. Over the years, Al Dente has never strayed from the golden advice of this world renown culinary sage— “What is absolutely necessary to make wonderful pasta is a perfect blend of semolina and extra-fancy durum mixed with eggs and other great ingredients such as real spinach. And, the most important part is “sheeting” or rolling out the dough to make the finished product so light and delicate, just like homemade.”
Says Monique, “Time and Quality are the two “must have” ingredients in our original, tried-and-true, pasta recipe. We have never skimped on either and since day one we've stayed faithful to the very best ingredients and to the extra time it takes to roll out our dough, over and over. Otherwise, our dried pasta would not have its guaranteed 3-minute cooking time, the exact consistency of fresh pasta, and the taste of homemade."
