I am an Operations Manager for Young's, responsible for 11 premium pubs across London with a combined annual turnover of around £11m. I operate a number of different concepts within the Company's overall framework, from historic, food-led, riverside pubs to 'speakeasy' cocktail bars and pop up 'Burger Shacks'. I work closely with my General Managers and Head Chefs to deliver unstructured menus in each business using fresh, seasonal, British produce.
