From October 2007 to Present (8 years 1 month) HorshamTechnical Director @ I was parachuted into the largest sushi manufacturing business in the UK after it had failed its Tesco & JS PIU & PSA audits and was threatened with delisting prior to a move to a new site in Suffolk. My remit was to regain sufficient client confidence to not only pass the PIU & PSA audits, but for the proposed relocation to have their full support.
An intensive three month business improvement project was put in place with collaborative input from all key customers as well as the business stakeholders. By Jan 1st both Tesco and Sainsbury had re-audited with each awarding the site green status, with the move and subsequent business expansion signed off.
I led the detailed and business-critical design teams for the new factory as well as project-managing the build execution. Numerous subsequent NPD launches followed the successful opening of the new site, which was on-time and under budget. This work allowed me to see the potential in consultancy and from here I set up Latimeria Consulting Ltd when Ichiban fully relocated. From October 2006 to September 2007 (1 year) Hertfordshire, UKTechnical Director & Tesco Account Manager @ Technical Director and Tesco Account Manager for a co-operative of four UK mushroom producers. Responsible for the technical output of 6 sites in the UK and 4 in Poland and Holland.
Account Manager for a c. £15m Tesco account, key achievements included assisting in the implementation of a price minus costing strategy and industry-leading technical innovations within the European supply chain. From October 2002 to September 2006 (4 years) Shackleford, Surrey. UKTechncial Manager, Cutty Catering & Head of Retail at Fish! @ Responsible for the technical competencies at Cutty Catering, a leading supplier of fish to London's top table establishments and also the management of seven retail shops attached to Cutty's parent company, the Fish! chain of diners.
Cutty successfully underwent succesive BRC & MSC chain-of-custody certifications in 2001 & 2002 and the retail shops increased their turnover by 65% in the same period. From October 2000 to September 2002 (2 years) London, United KingdomTechnical Manager @ Responsible for the technical management of the largest (as then) supplier at Billingsgate Market in London. Supplying over 900 SKU's of frozen and chilled lines (with an approximate 80/20 split) to a wide range of clients in the SE of England and beyond, I was instrumental in achieving continual BRC certification from 1997 - a first at Biilingsgate. I also delivered a rebranding project of own label products that led to 17-45% uplifts in sales on a SKU-by-SKU basis, audited over 70 suppliers and helped in the design of a new, purpose built coldstore at the market.
